About this cut
Suea rong hai, the tiger that cries. One story says the cut is so good that even a tiger would weep to lose it.
Alternating layers of meat and fat char beautifully over charcoal and stay juicy inside. Slice it thinly, add sticky rice and a bowl of jaew, and you have the Isaan classic at home.

How to cook it
For the Thai classic, marinate in soy sauce, oyster sauce and a little palm sugar for an hour. Grill over hot charcoal until charred outside and pink within, slice against the grain and serve with nam jim jaew and sticky rice. Or smoke it low and slow for 8 to 10 hours.
