About this cut
Cut across the shin with the bone in the middle, this is the cut for slow cooking.
Hours in the pot turn its connective tissue into a rich, silky sauce, and the marrow melts into everything. Perfect for osso buco, stews and noodle soup.

How to cook it
Brown the pieces well, then braise them covered in wine, tomato and stock at a low simmer, or in a 160°C oven, for 2.5 to 3 hours until the meat falls from the bone. Do not skip the marrow. Shin is also superb in Thai beef noodle soup.
